Spinach and Mushroom Manicotti (adapted from a Barilla recipe)

makes 6 servings

Ingredients:

  • 8 oz. manicotti
  • oil for skillet
  • 8 oz. mushrooms, chopped
  • 1 garlic clove, minced
  • 6 oz. fresh spinach, chopped
  • 2 eggs
  • 15 oz. ricotta cheese
  • 1/3 cup fresh chopped basil leaves
  • 1 tsp. salt
  • 1 jar portobello mushroom pasta sauce
  • 1/2 cup grated Parmesan cheese

Procedure:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Cook manicotti for 7 minutes; set aside to cool.
  3. Meanwhile, heat oil in a large skillet over medium heat. Add mushrooms and garlic and let it cook for 5 minutes. Add spinach and cook for 5 more minutes. Set aside to cool.
  4. Beat eggs, ricotta, basil, and salt together in a medium bowl. Stir in mushroom mixture.
  5. Pour pasta sauce into a 13x9 inch baking dish until the bottom of the dish has a thick layer of pasta sauce. Fill manicotti with mushroom mixture and place in the dish. Pour the remaining pasta sauce over the manicotti and top with cheese.
  6. Cover the dish with foil and bake for 30 minutes. Remove foil and bake for an additional 8 minutes.
